Our version uses the cleanest organic ingredients, stays gluten-free, and avoids corn wherever we can. The original is shown exactly as the creator posted it.

spoons

Ingredients

  • 2 rolls gluten-free puff pastry (or homemade with GF flour and butter)
  • 1 pasture-raised organic egg yolk
  • 1/4 cup organic whole milk
  • Organic sesame seeds
  • 1/2 cup organic cream cheese
  • 12 slices wild-caught cured salmon (no added dextrose)
  • Organic salad leaves

Method

  1. Cut spoon shapes from the puff pastry. Brush with the egg yolk whisked into the milk, and sprinkle with sesame seeds.
  2. Drape each one over a tube of foil and bake at 374°F (190°C) for 15 minutes, until golden.
  3. Fill each spoon with cream cheese, a few salad leaves, and a rolled slice of salmon.

What we changed and why

  • Puff pastry is wheat. Gluten-free puff pastry is hard to find and often contains cornstarch.
  • We chose wild-caught. Some cured salmon uses dextrose.
