party servings

Ingredients

  • 2 lb grass-fed ground beef, cooked, drained, and seasoned
  • 24 oz organic sharp cheddar, shredded from the block, plus 1 cup organic whole milk and 1 tbsp organic arrowroot starch (replaces 32 oz Velveeta)
  • 1 cup organic Colby Jack, shredded from the block
  • 1 organic red onion, diced
  • 1 organic white onion, diced
  • Organic ketchup (no corn syrup), avocado oil mayonnaise, organic mustard, organic relish, and homemade burger seasoning, to taste

Method

  1. Toss the cheddar with the arrowroot and stir in the milk. Combine everything and smoke on a pellet grill, or bake, until melted and bubbly.
  2. Season the condiments to taste.

What we changed and why

  • Toss the shredded cheddar with the arrowroot before stirring in the milk, so the dip melts smooth instead of turning oily.
  • Velveeta has corn-based additives. Cheddar tossed with arrowroot and loosened with milk melts just as smooth.
  • Pre-shredded cheese is coated in anti-caking starch.
  • Ketchup without corn syrup, avocado oil mayo in place of soybean oil mayo, and organic condiments.
