Our version uses the cleanest organic ingredients, stays gluten-free, and avoids corn wherever we can. The original is shown exactly as the creator posted it.

servings

Ingredients

  • 4-5 pasture-raised organic eggs
  • 1/4 cup organic grass-fed heavy cream (no added gums)
  • 1 tbsp gluten-free chili crisp or salsa macha (check for soy sauce), plus more for topping
  • Organic chives, to taste

Method

  1. Heat a pan on high for 2 minutes. Add the cream and chili crisp, turn the heat to medium, and simmer for 1 minute.
  2. Crack in the eggs, cover, and cook 2-3 minutes, until the whites are set.
  3. Top with chives and a little more chili crisp.

What we changed and why

  • Some chili crisps contain soy sauce (wheat).

Items marked "check" need a quick label read: corn hides in starches, dextrose, and vinegar.
