Our version uses the cleanest organic ingredients, stays gluten-free, and avoids corn wherever we can. The original is shown exactly as the creator posted it.

bagels

Ingredients

  • 2 cups Bob's Red Mill Almond Flour
  • 1 1/2 cups organic cottage cheese (no added gums)
  • 2 tsp corn-free baking powder
  • Organic grass-fed butter, for brushing
  • 2 tbsp organic everything bagel seasoning

Method

  1. Blend the cottage cheese first so the dough comes out smooth. Mix it with the almond flour and baking powder and knead until firm, adding a little more almond flour if needed.
  2. Shape into 8 bagels, brush with butter, and sprinkle with the seasoning. Bake at 350°F for 15-18 minutes, until golden. In the air fryer, cook at 350°F for 10-15 minutes.

What we changed and why

  • Most baking powder contains cornstarch. Choose one made with arrowroot or potato starch.
  • Check that it has no anti-caking agents.

Items marked "check" need a quick label read: corn hides in starches, dextrose, and vinegar.

Swap ideas

  • Butter: Ghee (lactose and casein mostly removed); Virgin coconut oil; Avocado oil for savory cooking
  • Cheese: Nutritional yeast for a cheesy flavor; Cashew-based cheese
  • Cottage cheese: Lactose-free cottage cheese; Blended firm tofu (if soy is OK)
  • Almond flour: Sunflower seed flour (it can turn green with baking soda; harmless); Tigernut flour
