Ingredients

Steak bites

  • 800g grass-fed lean topside (top round) beef, cut into 1-inch cubes
  • 1 1/2 tsp sea salt
  • 2 tsp organic black pepper
  • 2 tsp organic garlic powder
  • 2 tsp organic parsley
  • 2 tsp organic extra virgin olive oil
  • 20g organic grass-fed butter for cooking, plus 20g stirred in at the end
  • 4 organic garlic cloves, minced
  • Fresh chopped organic parsley

Crispy potatoes

  • 900g organic potatoes
  • Sea salt, organic pepper, organic smoked paprika, organic garlic, organic parsley; optional organic extra virgin olive oil

Spicy mayo

  • 30g avocado oil mayonnaise
  • 15g sriracha or hot sauce (made with cane or cider vinegar)
  • Organic lemon juice

Method

  1. Season the beef cubes and sear in butter with garlic until crusted.
  2. Air fry or roast the seasoned potatoes until crisp.
  3. Stir the extra butter and parsley through the steak bites off the heat.
  4. Mix the spicy mayo and serve.
  5. Per serving: 480 cal, 50g protein.

What we changed and why

  • Iodized table salt usually contains corn-derived dextrose; sea salt avoids it.
  • Many hot sauces use distilled vinegar, which is usually made from corn.
