brownies

Ingredients

  • 200 g baked and peeled organic sweet potato, mashed (about 2 small or 1 large; 1 cup)
  • 130 g organic almond butter (1/2 cup; do not sub organic peanut butter, the flavor changes)
  • 15 g organic raw cacao powder (1/8 cup)
  • 35 g raw organic honey (1/8 cup)
  • Optional: organic chocolate chips (corn-free, cane sugar)

Method

  1. Bake or microwave the sweet potato until soft, then peel it and mash until completely smooth.
  2. Mix in the almond butter, cacao, and honey. Spread it in a baking tray, add chips if you like, and bake at 350°F (180°C) for 25-27 minutes.
  3. Let them cool completely before cutting. They are even better the next day.

What we changed and why

  • Some chips use corn-derived dextrose or vanillin, so read the label.

Items marked "check" need a quick label read: corn hides in starches, dextrose, and vinegar.
