servings (2 tbsp)

Ingredients

  • About 30 fresh organic jalapenos, sliced 1/4 inch thick
  • 1 cup raw organic apple cider vinegar
  • 3 cups organic cane sugar (can go 2-6 cups; 1 cup raw organic honey also works but candies less well)
  • 1/2 tsp organic garlic powder
  • 1/2 tsp organic turmeric
  • 1/2 tsp organic celery seed (celery salt works)

Method

  1. Bring everything except the peppers to a boil until the liquid bubbles up. Add the peppers and cook for 5 minutes.
  2. Lift the peppers into jars with a slotted spoon. Cook the syrup 5-10 minutes longer, let it rest 5 minutes, pour it over the peppers, and seal.
  3. Keep them in the fridge. They taste even better after 1-3 weeks.
  4. Wear gloves when you cut the peppers, and save the leftover brine for wings, dips, or cocktails.
