Ingredients

  • 1 1/4 cups (180 g) Bob's Red Mill Gluten Free 1-to-1 Baking Flour
  • 3 scoops clean vanilla protein powder (grass-fed whey, no maltodextrin; check flavoring) (90 g)
  • 3/4 cup organic peanut butter powder (95 g)
  • 1 cup pure monk fruit sweetener (not erythritol based)
  • 1 tsp Bob's Red Mill Baking Soda and 1 tsp corn-free baking powder
  • Pinch of sea salt
  • 3 pasture-raised organic eggs
  • 1 1/2 cups organic plain whole-milk Greek yogurt plus a splash of vanilla (330 g)
  • 1/3 cup organic applesauce (80 g)
  • 2 tbsp melted organic virgin coconut oil (30 ml)
  • 1 tbsp melted organic peanut butter (just peanuts and salt), plus 1 tbsp for drizzle
  • Splash of organic unsweetened almond milk (gum-free) if the batter is too thick

Method

  1. Mix everything into a batter. If it feels too thick, loosen it with a splash of almond milk.
  2. Bake at 320°F for 60-65 minutes.
  3. Each slice comes to about 330 calories and 28 g protein, by the creator's count.

What we changed and why

  • Bob's Red Mill Gluten Free 1-to-1 Baking Flour replaces the wheat flour. We kept the creator's 180 g, which is about 1 1/4 cups of Bob's (37 g per 1/4 cup).
  • Many protein powders contain maltodextrin, which is usually corn.
  • Most zero-calorie blends use erythritol, which is usually made from corn. Sweetness of monk fruit blends varies by brand.
  • Most baking powder contains cornstarch. Choose one made with arrowroot or potato starch.
  • Iodized table salt usually contains corn-derived dextrose. Sea salt does not.
  • Flavored yogurts often contain corn-derived sweeteners or starch.
  • Gums like gellan are often fermented on corn sugar.

Items marked "check" need a quick label read: corn hides in starches, dextrose, and vinegar.
